Raw Cacao and Walnut Truffles

These delightful, delicious truffles are like small bites of heaven. It is hard to believe that they're unhealthy. They're unbelievably rich, moist and melt in your mouth. I must admit, I made a batch and devoured half of them on the first day. All of the ingredients are packed with huge amounts of plant protein, fibre and vitamins, as well as rich sources of calcium from the chia seeds. The super food nature of raw cacao powder which is packed with more antioxidants than anything else, make these the ultimate truffles.

Makes 25 truffles

2/3 of a cup of walnuts
2/3 of a cup of hazelnuts
3 tablespoons of cacao
1 tablespoon of almond butter
3 tablespoons of coconut oil
2 cups of dates
2 teaspoons of cinnamon
2 tablespoons of agave syrup
1 tablespoon of chia seeds

All you do is simply place everything into the food processor for about 5 minutes, until a sticky, gooey ball forms.

Roll the mixture into little bite sized balls using your hands and then refrigerate over night.

I love to make these on a wednesday night so that they are ready for thursday (my weekend).
