Sweet Potato Brownies

If i were to tell you what my favorite foods of all time were, sweet potato would be one of them. Along with dark chocolate, dates and brownies (the list is endless, so I will save that for another day). It only seemed natural to combine all of these to make sweet potato brownies. And I have to admit, making these made me far more excited than they should have. But  my excitement was within good reason as they were mind blowingly good. Being the chatter box I am, I shared the excitement with everyone; collecting mixed reviews about my quest to mix sweet and savory, questioning whether I may have taken healthy baking one step too far. But believe me not, they are the softest, gooiest, yummiest brownies you will ever taste and if they are one step too far, then it is totally worth it. Better still, they all combined of only six ingredients and they're all good for you!



With sweet potato being packed with vitamins such as C and D. Making them full of goodness, as well has being full of natural sugars making them sweet. But it also means that there is a slow release in sugar to the blood stream so that it doesn't spike your blood sugar levels. This might be totally taking the excitement away from the brownies, but there is nothing better than guilt free snacking...especially on brownies.


Makes 10 Brownies

- 2 medium to large Sweet Potatoes 
- 2/3 cup of Ground Almonds
- 1/2 a cup of Brown Rice flour 
- 14 Medjool dates
- 4 tablespoons of Raw Cocao 
- 3 tablespoons of pure Maple Syrup 
- a pinch of Salt

Start by pre-heating your oven to 180oC. Peel the potatoes and pop them in the steamer for 20 minutes until they're soft. (Alternatively you could do this step in the oven, 20 minutes each side).

The next step is to place the soft sweet potato in the food processor along with the dates. Be prepared to taste the sweetest, most delicious mix!

Mix in the remaining ingredients with the sweet potato and date mixture.

Pop this ooey gooey mixture into a baking dish and place them in the oven for 20 minutes. Stab them with a cocktail stick to be sure they are done before taking them out! 

Once the longest 20 minutes of your life has passed, the even longer 10 minutes of cooling is next. But this is vital in allowing them to stick together.

When the 10 minutes is up, waste no time in cutting these bad boys into squares and tuck right in!
